Lunch & Dessert Made Easy

In a previous post we covered Breakfast & Dinner Made Easy.  Today we have a few ideas for making Lunch & Dessert easy. But before that,  here are a few tips for helping you get your meals ready for the week, adapted from 15 Lunch Box Packing Hacks Every Mum Should Know, All You.  This way you can maximise your relaxation time after those long days at work.

1. It's a good idea to do a rough plan of your meals for the week i.e. breakfast, lunch & dinner.  This helps to cut back on your time spent at the supermarket because you'll have an idea of the groceries required for your meals before hand.  Having your ingredients on hand also means that you can prep for your meals from the night before.  We trinis love our big Sunday lunches.  So while prepping your vegetables for Sunday lunch, why not prep vegges for the entire week.  Vegges can then be stored in portions in air tight containers or zip lock bags and used as needed during the course of the week.  Also, fruit can be sliced the night before and packaged for the next day.



2. In planning your meals remember to keep them interesting or you and your family may get bored with the meals.  A good idea is to mix up your side dishes.  Try new uncommon side dishes like hard boiled eggs which can be pre-boiled for the week or air popped popcorn or maybe some butter (lima) beans.

3. A well rounded and nutritious meal has five main elements.  Try to incorporate these elements as you plan, cook and package your meals:
Protein - maybe 2 ounces of lean chicken breast or two table spoons of peanut / almond butter or two eggs
Fruit - at least 1 cup of fruit which can be tropical such as mangoes, citrus, watermelon or apples, straw berries, grapes
Vegges - again at least 1 cup of vegges such as carrots, green beans or corn
Grains - these can be incorporated through whole grain bread or granola bars
Milk - preferably low fat
